Malaysian butter nicecream

5 years ago I trained a wonderful client that had lived many years Malaysia. Although most of the time she and I exercised and discussed various fitness methods, occasionally we shared recipes and spoke of different cultural cuisines. The greatest takeaway from these chats was learning how the Malay use their ingredients so wisely, with means to reach every part of the palate.

It is common in Southeast Asia to use bananas in many dishes, yet in so many unique sweet and savory dimensions. Malay butter nicecream is the first combination I mixed; the cucumber and peanut-butter creates both a delicate and rich sensation to the taste, and the nutrient packed ingredients takes care of post workout nutrient needs.

Ingredients

  • ½ frozen banana

  • 2 ice cubes

  • 1 medium peeled frozen cucumber (timun)

  • ½ cup watercress or “cress” (depending on season:)

  • ¾ cup Ripple or almond milk

  • 1-2 tablespoon peanut butter or PBpowder

  • 1.5 tsp honey maple syrup or stevia

  • 5 fresh basil leaves (selasih)

  • Sprinkle of cinnamon or vanilla

  • sprinkle of ginger (halia)

To make:

  • Place all ingredients in Ninja or other high power blender. Blend until smooth;  serve immediately.

Tips

For a more simple blending process, slice banana and cucumbers into “chips” before freezing
