Vegetable chicken soup with rice

This soup is all about recovery, but that does not demean the preventative essentials of the ingredients. We first tasted this hearty combo while traveling through the south of France for a gymnastics competition in Marseilles. Our host family had it simmering when we arrived from our first double session of training that followed our over-night flight. It was the most amazing much needed bowl to the soul.

This soup can be made in a crock-pot or Le Creuset. Crock-pot recipe would be prepared the same but it is suggested to go a little lighter on the pre-cooking steps, and allow the simmering to occur over a longer period of time on low.


  • 2 cups fresh broccoli (stacked with vitamins!)

  • 2 cups diced yams (carbs to help replenish energy)

  • 2 cups prepared brown rice (ditto above)

  • 16 oz organic ground chicken (protein for rebuilding muscles)

  • 2 tbsp olive oil (healthy fat)

  • 2 tbsp maple syrup (magnesium and and earthy sweetness)

  • 1 tsp herbes de provence (a little french baiser)

  • 1 tsp oregano (anti-microbial properties)

  • Chopped fresh basil to taste (aroma & herbal sweetness)

  • Himalayan pink sea salt to taste (recovery/restorative properties)

  1. In large pot sauté broccoli and sweet potato with olive oil until soft

  2. While this cooks, set up a side pan on medium heat, form 12 small chicken meatballs, add to pan, sprinkle with salt and brown slightly

  3. Next, add frozen or precooked brown rice to pot and warm if frozen cover with lid and let steam through)

  4. Add 4 cups purified water, salt, and bring to simmer

  5. Add maple syrup and stir

  6. Add chicken meatballs and all herbs except fresh basil

  7. Simmer for 20 minutes

  8. Slightly cool

  9. Restir and serve topped with fresh basil
