Steel cut oat bars

Steel cut oat bars

These bars are great in the morning or packed for lunch — we store them in fridge — but they never last long ;)

Makes 12 servings

Preheat oven to 375

Gather the following:

2 cups steel-cut oats soaked (overnight) and drained (Celiac athletes can use GF certified oats)

1/4 cup olive oil

1/4 cup maple syrup

2 eggs

1/2 cup raisins (lowfod option: blueberries)

2 tbsp chia seeds

1/2 cup ground nut of choice (we used almonds but peanuts or macadamias are great too!)

1 cup GF pancake mix we use King Arthur with 1/2 tsp salt

  1. Whisk eggs, oil, and maple syrup

  2. Blend with oats, nuts, raisins

  3. Add pancake/salt mix and chia seeds and blend well

  4. Spread mix onto casserole dish or jellyroll pan

  5. Sprinkle with cinnamon and ginger to taste

  6. Bake for 25 minutes (or until springy)

  7. Remove, cool, and slice
