Blueberry yogurt portables

Blueberry yogurt portables

1/2 cup nut flour

1 cup King Arthur pancake mix

2 TBSP maple syrup

1 cup Siggis blueberry yogurt

1/2 cup blueberries

1/2 cup Ripple milk

1/4 cup orange juice (add more if consistency is too thick for muffins)

2 tablespoons olive oil

3 eggs

  1. Combine all ingredients in bowl and mix well.

  2. Scoop into small servings on either parchment (for scones) or mini-muffin tin for muffins

  3. May sprinkle with light dusting of coconut crystals (as seen in photo)

  4. Place in oven set to 400

  5. Cook until golden and fork-prod comes out clear

  6. Cool and wrap to travel

  7. Store leftovers in freezer to thaw or toast
