Mixed rainbow choc-chip scookies

Meet our hybrid - cookie + scone - packed with protein, fruit, and veggies

LOWFODMAP, GF, DF

Ingredients: 

·       1 cup GF pancake flour

·       1/2 cup potato starch

·       1/2 cup tapioca starch

·       2 teaspoons baking soda

·       2 teaspoons ground cinnamon

·       1/2 teaspoon fine sea salt

·       ¼ cup raw sugar

 

·       In blender:

·       ¼ cup organic pure maple syrup

·       1 ripe banana

·       1 cup strawberries

·       1/2 cup blueberries or raspberries

·       2 peeled kiwi

·       1 cup roasted mixed sweet potatoes

·       1 teaspoon vanilla extract

·       ½ cup Ripple milk

·       1 cup nut-butter

·       6 eggs

 

·       1 cup chocolate chips

 

Method: 

Preheat the oven to 400°F. Line cookie sheet.

Blend in blender – all fruit and veggies, syrup and vanilla. Add eggs, nut-butter, Ripple milk and re-blend until smooth. Pour into bowl and mix-in dry ingredients; add chocolate chips 

Scoop batter on sheets into scone/cookie-sized circles and bake until cooked through, slightly browned and broken on top.
