Strawberry protein bites
Looking for a lite bite on the go? Try this protein packed mini-tart. A perfect pre or post practice fuel; GF, LF, DF
Preheat oven to 375-400 depending if oven runs hot).
Prep following ingredients to be blended in processor:
1 loaf GF bread
4-5 tbsp nut butter
1 tsp olive oil
1/4 cup Ripple milk
Blend ingredients in processor until dough forms and set aside in separate bowl.
In large pot combine the following:
12 oz frozen organic strawberries
1 cup chopped baby carrots (we slightly roasted ours first)
1/4 tsp cinnamon and ginger
1/4 cup maple syrup
dash of olive oil
Set stove to medium, and warm ingredients until completely soft and then simmer for 5 minutes:
Remove from burner and cool.
Once cool, add strawberry mixture to processor and blend until smooth, then set aside.
Using a small bowl of water, slightly moisten hands to keep batter from sticking as you work, roll batter into small balls, placing each one into mini muffin section.
Once each section is full, press into small pie shapes, making room for filling.
Bake in oven at for 10 minutes, until lightly browned.
Remove and fill each mini-pie to the top with strawberry mixture.
Bake for 12-15 minutes or until mixture bubbles evenly for 3-5 minutes.
Remove from oven, let cool completely while you head for a run :) — comeback and enjoy!
